Homemade almond cake: everything you need

Ingredients. To prepare this incredible dessert you need to:

250 gr. sweet potato.

200 gr. of almond flour.

4 eggs

1 banana

50 ml of olive oil.

5 gr. of baking powder.

With the amounts mentioned, what you get is a medium-sized sponge cake. To make it bigger, all you have to do is increase them while respecting the proportions of the ingredients.

How to make this cake without sugar step by step?

Elaboration. The first thing to do is peel the sweet potatoes, cut them into small pieces and bring them to a boil in plenty of water.

In parallel, you have to put the almond flour in a pan and dry the toast over moderate heat. Once it is ready, remove it and let it rest.

In a bowl or container, add the 4 eggs, the banana, the olive oil and the cooked pieces of sweet potato. Then, beat with a food processor or blender until all the ingredients are well integrated and a homogeneous mixture is obtained.

Regarding the flour, first, you have to add the baking powder, mixing it and integrating it well. Once this is done, the next step is to add the previous preparation, stirring well to unify everything.

With the mixture already ready, the only thing left to do is take it to the oven. First of all, the chosen mould or pan must be covered with parchment paper, or buttered and floured, to prevent the cake from sticking.

On the other hand, it is important to know that the oven has to be preheated to a temperature of 165 ° C. How long do you have to cook for? Approximately 45 minutes, or until you insert a toothpick in the centre and observe that it comes out dry and clean.
